Our purest Ceremonial
Some mornings rush past. The No.3 is the opposite: a scoop of jade-green powder, a little hot water, thirty seconds of whisking, and time slows down. Made from a single cultivar, Okumidori, grown in Uji and picked at the first spring harvest, this is our purest grade: the one you sip straight, and that also softens beautifully into a delicate latte.
The Okumidori cultivar
Okumidori ripens slowly, in the shade, and you can taste it: a natural, almost sweet softness, a deep umami, zero bitterness. It is a cultivar prized in Japanese signature matchas, rarely offered on its own. Here it is: single-cultivar, full traceability, limited harvest.
Uji, 800 years of matcha
The birthplace of matcha since the 12th century, Uji treats tea as a craft: rich soils, morning mists, gestures passed down through generations. Japan’s most prestigious terroir, straight into your cup.
The benefits
With matcha, you drink the whole leaf. L-theanine delivers calm energy that lasts 4 to 6 hours, no spike, no crash. Catechins (EGCG) and chlorophyll from shade-grown tea make it one of the most antioxidant-rich drinks there is. The result: soft, grounded focus that carries your morning instead of rushing it.
How to prepare it
Usucha (light matcha, with water)
1 g (one heaped chashaku scoop) in a bowl, 70 ml of water at 75 °C, whisk in a W motion with the chasen until a fine foam forms. Two minutes, no more: this is your moment.
Koicha (thick matcha, traditional ceremony style)
3 to 4 g for 40 ml of water at 70 °C, slow circular blending. Velvety texture, concentrated umami: the meditative version, reserved for the purest grades like this one.
Frequently asked questions
Can I drink it as a latte? Yes. The No.3 is structured enough for a delicate latte where its soft notes still shine. For bolder everyday lattes, the Barista No.1 is built for that.
How many cups per tin? About 50 cups per 50 g tin as usucha (1 g per cup).
How do I store it? Tin tightly closed, away from light, refrigerated after opening. Optimal freshness for 2 to 3 months.
